i'd stick with what it's got then and sort the linkage so you can get full throttle in one 'handful'. at least that's where i'd start as you'd still have the linkage issue with any replacement carb too. mpg sounds ok for the carb size.

You can get a quick action twist grip, as used in motocross that will give you full throttle quicker.

I contacted Boss Hoss with my VIN number to get the full spec of my engine. Turns out it was the cheapest option at the time (1996)
It’s a L81 that’s 190 BHP stock. I’m guessing it won’t matter what carb I fit is not going to light up the back end ??

You could put a 390 on it, it would not matter, the engine has a brush handle for a camshaft and no compression so to speak, i'm just doing a 305 in a...LMFAO....'86 Z28, T5....the badge is a waste of time on this vehicle.
