Sounds to me,if you havent looked already, like a breather problem.
Older rv8s had breathers going all over the place, and the fact youve holley carbs and obviously not origing airtake, makes me think whats happened to the breathers?
RV8,S they say need to breather alot.
Maybe one isnt there, fell off, perish,or has got rerouted and back pressur is forcing fumes out elsewhere.
im trying to think off the top of my head, originally youve got a breather from each rockercover to to each carb, then if looking at engine with fan closest to you, theres a breather at the back of right side of engine, that goes to air filter elbow, and a small breather from rear engine, left side ,that creeps up to rear of air filter.
If any of these are off, they very well find there way in the motor.
Or have you got oil dripping from rear main seal and burning somewhere the early v8s leaked oil alot,as they had 2 part rope oil seal.,?
Another thing could be a seeping fuel pump.
IF this has only started since exhaust change, maybe the exhaust manifold gaskets, that are actually handed, where fitted wrong way round which can cause gap...
i dont know how much of the above youve tried

if breather fumes, fit a pcv valve in one of the valve covers to manifold vacuum (the big pipe one holley carb base will do) and a piped breather to the underside of the air filter into the other. if exhaust fumes, what holley do you have? if someone fitted a 600 (cheaper than a 390) then its too rich as stock and will make your eyes sting when stood behind it.
