So, I've bought a 2 speed Mini motor, now I'm not expecting anyone to give me a step by step wiring guide for a Lucas motor to Suzuki wiring! But, should it be possible to connect the motor to my existing wiring and stalk switch or do I need a Lucas switch? I have googled it but the outcome so far is, err, vague...

Use the Suzuki switches to trigger relays ( most modern stalks can't take full voltage ) and wire from the relays to Morris Thousand motor.
