Plasterboard is very good for sound deadening.

In our last place we had the same sort of doors, I used bubble wrap behind plasterboard, with loft insulation in the void.
Why did I do it? Because I had a load of wrap, and left over board and insulation
    It worked a treat!

Moisture resistant insulation backed plasterboard - 50mm thick - it will insulate for sound and heat/cold. Used this as an alternative to cavity wall insulation (and its issues) - works well

The most important thing to remember about sound is that 90% of it can get through a 10% hole.

So pay attention to any gaps around the doors, and block them, preferably with compressible seals.

The bottom gap is the most tricky, but dense draught proofing brush seals can be surprisingly effective there.

Use rock wool or similar in between the door braces and clad with cheap ply.

Rigid insulation has very little sound proofing qualities, so best to avoid that.

kev for acoustic insulation you need density so thermal insulation is not good rockwool r45 bats are for acoustic insulation so would be good

the gap around the door will be the weak point so draft excluder to seal the gap

The key to any sound insulation is to stop the sound travelling in a straight line. In recording studios the engineers booth is separated by 4 pieces of glass set at different angles....by the time the sound waves get bounced around they don’t make it through the last bit.
Obviously sticking 4 pieces of glass to your doors is totally impractical but the principle is there. One solid layer of plasterboard will do nothing really, but 2 layers of carpet and something over the top to tidy it up should do the trick
